Super-Chocolatey Fridge Cake!

I wanted to use up some dark chocolate (for some reason we have lots in the house and nobody really eats it!) I had my heart set on a chocolate fridge cake, but I couldn't find a recipe I particularly liked online- so I created my own, taking bits and pieces from several others I found. The result is amazing (if I do say so myself) it's richly chocolatey, as well as fudgy and chewy, with lots of yummy ingredients added in (though I'm very sad I had no glace cherries- I love them!)

You will need:

300g dark chocolate
4 Tablespoons golden syrup
75g butter

I used (but each is optional):

50g rice crispies
50g corn flakes
50g dessicated coconut
150g sultanas
100g dried dates




You can add in anything you like- I had 400g of dry ingredients (I think you could get away with up to about 500g, depending on what it is) I definitely recommend using some kind of cereal in your mix though, the added crunch is nice. I think things like malteasers or marshmallows would be great additions too :)


1) Place the chocolate, butter and golden syrup into a saucepan and gently heat until the chocolate has melted and the ingredients have combined.





2) Place whatever dry ingredients you choose into a large bowl, and pour the chocolatey mixture into it. Stir it all together (this can take a while- there's a lot of ingredients there!)





3) Spread your mixture into a lined (I prefer cling film for this) pan/tin/dish and flatten it out a little. At this point I also decorated the top with some edible glitter and sugar strands (basically I wanted to use them up) Then leave it in the fridge to set. This could take a couple of hours- but I was impatient and put it in the freezer for about 20 minutes instead!





4) Once it's set, turn it out onto a chopping board, and cut it into squares :)





YUM!!! :)

This is a great (really easy) recipe to make with children, and you can trick them into eating dried fruit! And it's practically fool-proof, most ingredients will taste yummy in it :)
