Dark Chocolate and Baileys Fudge!

Not content with making white chocolate & baileys truffles, I also *had* to make some dark chocolate fudge- I love making sweets! I used a similar recipe to the vanilla fudge I showed you last week, so it's really easy to make, and very yummy :)

Again, I couldn't find a recipe I really liked... so I did some recipe improvisation again, and it worked really well!




You will need:

500g caster sugar
125ml baileys
125ml double cream
1 tablespoon cocoa powder
100g dark chocolate






1) Place the sugar, baileys, cream and cocoa powder into a large (preferably heavy bottomed) saucepan. I (stupidly) didn't sift my cocoa powder, but you should- those lumps were hard to remove!




2) Gently heat until the sugar is dissolved, then bring to the boil. Boil whilst stirring constantly for around 5 minutes- until the mixture reaches 114C- the soft ball stage I explained in my vanilla fudge post.

3) Remove from the heat and leave to cool for a few minutes. Add the chocolate and stir it all in. This fudge will become thicker and glossy- just how chocolate should look (this was very reassuring to me!)

4) Pour the fudge into a tray/dish lined with either cling film or greaseproof paper. Allow it to cool (at room temperature- you're not supposed to cool it in the fridge, something to do with cooling too fast creating crystals?)




5) Once it's totally cooled take it out of the tray and chop it into small squares (this is quite rich and sweet, small squares really will do) and store in an air-tight container in the fridge. This will also keep for rather a long time in the fridge, but it probably wont last that long!

I need to stop making sweets now- much as I love it- I'm running out of people to give it as gifts, and if I make any more my whole family may just spontaneously develop diabetes...
