White Chocolate Baileys Truffles :)

As I said last week (in my vanilla fudge recipe post) I really love making sweets and truffles at Christmas time, and for me they are infinitely better when combined with Baileys- my favourite Christmassy drink!

So I got myself  a nice new bottle of Irish Knight- a cheaper version of Baileys which is just as lovely and only £4.42 from asda! But after much searching (I love reading recipes) I couldn't find any recipes I really liked the look of, so I combined several, added my own ingredients and pretty much made up my own!

These are really easy and rather impressive looking, very good for a last minute Christmas gift :) They also work quite well as after dinner chocolates.


You will need:

30g unsalted butter
80ml double cream
300g white chocolate
60ml baileys
1/2 teaspoon vanilla extract

cocoa powder and icing sugar,
or more white chocolate to coat.

Please note, I made half quantifies as I didn't have enough white chocolate, but I recomend making more! Especially if they're for gifts.


1) Place the cream, baileys and butter into a saucepan (non-stick would be best, but not essential) and heat gently until the cream is just boiling (slightly bubbling at the edges of the pan)




2) Take the cream mixture off the heat, and add the chocolate and the vanilla extract. Stir thoroughly to melt the chocolate, and the mixture will become much thicker.




3) Spread the mixture onto a tray lined with greaseproof/baking paper. Pop it in the fridge to cool- it will probably take about 1/2 an hour ish- it needs to be solid.




4) Once it's cooled, tear off small pieces and roll into balls between the palms of your hands. It will warm up very fast with your body heat so roll fast and handle it as little as possible! You can make them as small or large as you wish- I often make slightly smaller ones as I can eat more and feel a little less guilty :p - but do try and make them evenly sized, they look much more 'professional' that way.



5) At this stage you have two options: you can either place the balls back in the fridge to firm up again, before rolling in melted white chocolate,  which is really yummy, but I didn't have enough white chocolate...

Or you can do what I did: mix a little icing sugar with cocoa powder and use the mixture to roll the truffles in. I really enjoy the contrast of the sweet and creamy white chocolate and baileys truffle with the slightly bitter cocoa powder, but I add a little icing sugar so it's not too bitter. Plus it is rather fun! (this is quite a good  kid-friendly recipe too)





Now you can store them in the fridge- either in an air-tight container or wrapped up as gifts! They should last quite a while, though they will probably get eaten rather fast!
